A monofloral honey from Lippia Javanica (lemon bush).
The A.LE & TOM winter honey is a rare, pearly, yellow honey sourced from the elevated southern highlands during the coldest and driest days of the year. Immediately after harvest, the winter honey naturally creams into a smooth buttery texture. This winter honey is refreshing with mint notes and floral undertones, characteristic of the lemon bush flower. The best way to enjoy our winter honey is by pairing it with toast, pastries, baked goods, and ice cream. This honey is raw, cold-pressed from honeycombs, and not subjected to any form of heat or UV treatment. All the nutritional benefits of natural raw honey are preserved in our winter honey.

All-Natural Raw Honey: All our honey is 100% natural and raw. A.LE & TOM honey is slightly filtered to remove debris, but pollens remain preserved in the honey. Our honey is not heated nor UV-treated. All vitamins and natural enzymes (with antibacterial, antioxidant, and anti-inflammatory properties) are preserved.
Naturally Organic Honey: A.LE & TOM honey is sourced from wild bees inhabiting protected forest reserves in Tanzania. The bees only forage natural flowers in their ecosystem.

Our entire supply chain—from carpenters making the hives, to beekeepers tending the hives, to the team carefully handling and packing the honey—benefits tremendously from our growing, fair partnerships.

I use New Zealand Manuka honey and the winter honey to me see is way better. I got this 2 weeks ago and I can say the texture is very smooth, not crystallized smooth, just smooth smooth. I noticed with the high heat in west coast, it does become a little more flowy but still very smooth. The best part is the aroma and the taste. After every spoon, it leaves a very refreshing cool feeling!!! its amazing
